Grilled Mediterranean courgette fans
Ingredients
for 4 person
4 | courgettes (each approx. 200 g) |
3 tbsp | olive oil |
½ tsp | salt |
a little | pepper |
200 g | feta, crumbled |
50 g | dried tomatoes in oil, thinly sliced |
50 g | pitted black olives, cut into rings |
20 g | capers |
2 | garlic cloves, sliced |
How it's done
Courgette fans
Cut the courgettes into long 5 mm-thick slices, making sure to leave the courgettes intact at one end. Place the courgettes in two grill trays.
Topping
Brush the courgettes with oil, season. Top the courgettes with the feta, tomatoes, olives, capers and garlic.
Charcoal/gas/electric grill
With the lid down, grill the courgettes over/on a medium heat (approx. 200°C) for approx. 20 mins.
