Ingredients

for 1 bread

Dough
80 g linseed
100 g mixed seeds
50 g walnut kernels, coarsely chopped
¾ tsp salt
150 g half-fat quark
egg yolks
1 dl water
2 tsp baking powder
½ dl water
egg whites
1 pinch salt
1 tbsp mixed seeds, coarsely chopped
1 tbsp walnut kernel, coarsely chopped

How it's done

Dough

Finely grind the linseeds in a food processor, place in a bowl along with all the ingredients up to and including the water, mix. Cover and leave to stand for approx. 30 mins.

Add the baking powder and water, mix.

Beat the egg whites with the salt until stiff, carefully fold into the mixture. Transfer the dough to the prepared tin, sprinkle with the mixed seeds and walnuts.

To bake

Approx. 1 hr. 30 mins. in the lower half of an oven preheated to 180°C. Remove from the oven, leave the bread to cool on a rack.
