Bean and barley salad with peach
Ingredients
for 4 person
200 g | Pro Montagna Bündner-Rollgerste |
salted water, boiling | |
500 g | green beans, cut in half |
1 tbsp | mustard |
5 tbsp | balsamic vinegar |
3 tbsp | olive oil |
1 tbsp | honey |
1 | shallot, finely chopped |
½ tsp | salt |
a little | pepper |
2 | peaches, thinly sliced |
1 bunch | radish, sliced |
How it's done
Pearl barley and beans
Place the barley in boiling salted water, reduce the heat, simmer for approx. 15 mins. Add the beans, simmer for approx. 10 mins., drain, rinse in cold water.
Salad dressing
In a bowl, mix the mustard with all the other ingredients up to and including the pepper. Add the barley and beans.
Salad
Add the peach and radish, mix.
