Feta and berry salad
Ingredients
for 4 person
50 g | sugar |
1 tbsp | water |
100 g | walnut kernels, coarsely chopped |
4 tbsp | white balsamic vinegar |
4 tbsp | olive oil |
¼ tsp | salt |
a little | pepper |
100 g | rocket |
500 g | mixed berries (e.g. blackcurrants, raspberries, blueberries, blackberries) |
200 g | feta, cut into 1 cm cubes |
How it's done
Walnuts
Bring the sugar and water to the boil in a wide pan without stirring. Reduce the heat and simmer, swirling the pan occasionally until a light brown caramel has formed. Add the walnuts, mix, leave to cool on baking paper.
Berry salad
Whisk the vinegar and oil in a bowl, season. Add the rocket and berries, mix carefully.
To serve
Crumble the caramelized walnuts, spread on top of the berry salad with the feta.
