Cherry and tomato salad

Ingredients

for 4 person

Basil dressing
2 tbsp herbal vinegar
3 tbsp olive oil
180 g plain yoghurt
½ bunch basil, roughly chopped
½ tsp salt
a little  pepper
Salad
500 g cherries, halved, pitted
400 g cherry tomatoes, quartered
200 g fennel, very thinly sliced
2 pinch salt
a little  pepper
To garnish
burrata (approx. 150 g)
40 g pine nuts, roasted

How it's done

Basil dressing

Place the vinegar in a measuring cup along with all the other ingredients up to and including the basil, puree, season.

Salad

Plate up the cherries, tomatoes and fennel, season. Top with the basil dressing.

To garnish

Tear the burrata, place on top of the salad, sprinkle with the pine nuts.
