Cherry and tomato salad
Ingredients
for 4 person
| 2 tbsp | herbal vinegar |
| 3 tbsp | olive oil |
| 180 g | plain yoghurt |
| ½ bunch | basil, roughly chopped |
| ½ tsp | salt |
| a little | pepper |
| 500 g | cherries, halved, pitted |
| 400 g | cherry tomatoes, quartered |
| 200 g | fennel, very thinly sliced |
| 2 pinch | salt |
| a little | pepper |
| 1 | burrata (approx. 150 g) |
| 40 g | pine nuts, roasted |
How it's done
Basil dressing
Place the vinegar in a measuring cup along with all the other ingredients up to and including the basil, puree, season.
Salad
Plate up the cherries, tomatoes and fennel, season. Top with the basil dressing.
To garnish
Tear the burrata, place on top of the salad, sprinkle with the pine nuts.
