Bean salad with plums
Ingredients
for 4 person
| 500 g | green beans |
| salted water, boiling |
| 1 tbsp | mustard |
| 3 tbsp | soy sauce |
| 2 tbsp | lime juice |
| 80 g | prunes, coarsely chopped |
| 1 | garlic clove, cut in half |
| 1 tbsp | toasted sesame oil |
| ¼ tsp | ground cumin |
| 1 dl | water |
| 300 g | plums, quartered |
| 1 tbsp | toasted sesame oil |
| 1 tbsp | soy sauce |
| 160 g | diced bacon |
How it's done
Beans
Cook the beans in boiling salted water for approx. 5 mins. until just soft, drain, rinse in cold water, return to the pan.
Dressing
Using a blender, puree the mustard with all the other ingredients up to and including the water. Pour the dressing over the beans, mix and set aside.
Plum and bacon topping
Mix the plums, sesame oil and soy sauce, fry in a non-stick frying pan with the diced bacon for approx. 5 mins. Plate up the beans, top with the plums and bacon.
