Vegan matcha and pistachio porridge

Winter isn't the only time that I love porridge for breakfast – I enjoy it lukewarm in spring, too! My fresh spring version comes with a helping of matcha for that much-needed energy boost in the mornings.

Ingredients

for 2 person

Porridge
2 dl soya drink
2 tbsp rice syrup
70 g rolled oats
1 ½ tbsp matcha powder
1 tbsp pistachio spread
Toppings
2 tbsp coconut milk yoghurt
2 tbsp chopped pistachios
20 g white chocolate, coarsely chopped

How it's done

Porridge

Bring the soya milk, rice syrup, oats, matcha powder and pistachio spread to the boil in a pan, simmer over a medium heat for approx. 5 mins. while stirring.

Toppings

Serve the porridge in bowls, top with yoghurt, pistachios and chocolate.
