Herb rice with chicken

Ingredients

for 2 person

Chicken
1 tbsp olive oil
250 g mince (chicken)
onion, finely chopped
garlic clove, squeezed
¾ tsp salt
a little  pepper
Rice
250 g Express long grain rice
1 dl water
organic lemon, grated zest and the juice
20 g pizza herb mix, finely chopped

How it's done

Chicken

Heat the oil in a non-stick frying pan, brown the mince for approx. 5 mins. Reduce the heat, add the onion and garlic, sauté for approx. 3 mins., season.

Rice

Add the rice, water, lemon zest and juice, stir fry for approx. 2 mins. Mix in the herbs.
