Pancake bake with berries
Ingredients
for 4 person
| 150 g | white flour |
| 1 tbsp | sugar |
| 1 parcel | vanilla sugar |
| 1 tsp | baking powder |
| ½ tsp | sodium bicarbonate |
| 1 pinch | salt |
| 2 ½ dl | buttermilk |
| 1 | fresh egg |
| 40 g | butter, melted |
| clarified butter for frying |
| 350 g | mixed berries |
| 2 | fresh eggs |
| ½ dl | buttermilk |
| 1 parcel | vanilla sugar |
How it's done
Batter
Empty the flour into a bowl along with all the other ingredients up to and including the salt, mix and make a well in the centre. Mix the buttermilk, egg and butter, gradually pour into the well while whisking, continue whisking until the batter is smooth.
Pancakes
Heat a little clarified butter in a wide, non-stick frying pan. Reduce the heat, pour as much batter into the pan as it takes to make pancakes of approx. 8 cm in diameter. Once the undersides are cooked they will no longer stick to the pan. Toss the pancakes, finish cooking, cover and set aside. Repeat these steps with the remainder of the batter. Transfer the pancakes to the prepared dish.
Bake
Spread the berries on top of the pancakes. Mix the eggs, buttermilk and vanilla sugar, pour over the top.
To bake
Approx. 25 mins. in the centre of an oven preheated to 200°C. Remove from the oven and leave to stand for approx. 5 mins., serve warm.
