Baked sea bream with vegetables
Ingredients
for 4 person
| 2 | gilthead seabream (organic), ready to cook |
| ½ tsp | salt |
| a little | pepper |
| 1 tbsp | olive oil |
| 600 g | kohlrabi, peeled, in carvings |
| 2 bunch | radishes, cut in half |
| 3 sprig | thyme |
| 1 dl | white wine |
| 1 tsp | salt |
| 100 g | frozen peas, slightly defrosted |
| 50 g | butter, cut into pieces |
| 60 g | almond slivers, roasted |
| a little | salt |
How it's done
Sea bream
Rinse the fish inside and out in cold water, pat dry. Season the fish inside and out, place on a baking sheet lined with baking paper, brush with oil.
Vegetables
Arrange the kohlrabi, radishes and thyme around the fish. Pour over the wine, salt the vegetables.
To bake in the oven
Approx. 30 mins. in the centre of an oven preheated to 200°C. Add the peas for the last 5 minutes.
Almond butter
Heat the butter in a small pan until it foams and smells slightly nutty. Remove the pan from the heat, add the almonds, season with salt. Serve the fish with the vegetables and almond butter.
