Strawberry mojito
Ingredients
for 4 glasses
2 dl | water |
300 g | strawberries, quartered |
120 g | sugar |
2 | cardamom pods |
½ | lime, the whole juice |
2 | limes, rinsed with hot water, dabbed dry, cut into segments |
2 tbsp | ground cane sugar |
5 tbsp | rum |
5 dl | sparkling mineral water |
some | ice cubes |
4 | strawberries, in slices |
4 sprig | lemon balm |
How it's done
Syrup
Bring the water, strawberries, sugar and cardamom to the boil, simmer for approx. 2 mins. Turn off the heat, cover and leave on the hob for approx. 10 mins, remove the cardamom and puree the strawberries. Pour the contents of the pan through a jelly bag or fine sieve, drain well. Return the liquid to the pan, add the lime juice, return to the boil. While still boiling hot, pour the syrup into a clean 500 ml bottle that has been rinsed with hot water, fill to just below the rim, seal immediately, leave to cool.
Mojitos
Pour 3 tbsp strawberry syrup into 4 glasses. Add the lime and sugar and crush gently with a fork. Pour in the rum and water. Fill the glasses with ice cubes, decorate with strawberry slices and lemon balm.
