Stuffed courgettes with feta
Ingredients
for 4 person
4 | courgettes (each approx. 200 g) |
200 g | feta, roughly crumbled |
80 g | pitted green olives, cut into rings |
1 | garlic clove, squeezed |
5 sprig | thyme, leaves torn off |
1 tbsp | olive oil |
1 | organic lemon, grated zest and 2 tbsp of juice |
¼ tsp | salt |
a little | pepper |
1 tbsp | liquid honey |
How it's done
Courgettes
Halve the courgettes lengthwise, remove the flesh with a spoon, finely chop the flesh and place in a bowl. Place the courgette halves in the prepared dish.
Filling
Mix the feta, olives, garlic, thyme, oil, lemon zest and lemon juice with the chopped courgette, season. Stuff the courgettes with the filling.
To bake
Approx. 40 mins. in the centre of an oven preheated to 200°C. Remove, drizzle with honey.
