Apple zopf buns

A simple zopf dough dotted with lots of apple cubes and shaped into a button. The result – fluffy apple zopf buns. A fruity alternative to traditional zopf. Perfect for the brunch or breakfast table, but also a real treat for a mid-morning or mid-afternoon snack.

Ingredients

for 8 pieces

Dough
500 g zopf flour
1 tsp salt
2 tsp sugar
½ cube yeast (approx. 20 g), crumbled
50 g butter, soft
3 dl milk
1 tsp vanilla paste
Apple sauce
apples, peeled, deseeded, cut into approx. 3 cm cubes
Buns
apple, quartered, thinly sliced
½  lemon, the whole juice
a little  cinnamon
To bake
a little  icing sugar

How it's done

Dough

Mix the flour, salt, sugar and yeast in a bowl. Add the butter, milk and vanilla paste, knead to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 1 hr. until doubled in size.

Apple sauce

Place the apples in a pan and cover up to half way with water. Bring to the boil, reduce the heat, simmer the apples for approx. 20 mins. Drain the water, puree the apples until smooth and allow to cool slightly.

Buns

On a lightly floured surface, roll the dough out thinly into a rectangle (approx. 40 x 50 cm). Spread the apple sauce and half of the apple cubes on top of the dough, fold the other half over the top. Cut the dough lengthwise into 8 strips. Twist each strip and shape into a button. Transfer to a baking tray lined with baking paper. Sprinkle the remaining apple cubes and cinnamon on top of the buns.

To bake

Approx. 30 mins. in the centre of an oven preheated to 200°C. Remove from the oven, dust the buns with icing sugar while still warm, slide onto a cooling rack, leave to cool completely.
