Peanut, caramel and chocolate Bircher muesli
Ingredients
for 4 person
2 ¾ dl | almond drink |
4 tbsp | maple syrup |
4 tbsp | peanut butter |
1 ½ tsp | vanilla paste |
130 g | rolled oats |
3 tbsp | ground almonds |
1 ½ tbsp | chia seeds |
100 g | Medjool dates |
120 g | coconut cream |
3 pinch | salt |
80 g | unsalted peanuts, roasted, roughly chopped |
80 g | dark chocolate (64% cocoa), finely chopped |
How it's done
Muesli
Mix the almond milk, maple syrup, peanut butter and vanilla paste in a bowl. Add the oats, almonds and chia seeds, mix. Cover and chill the muesli.
Date caramel
Puree the dates with the coconut cream and salt until smooth. Stir in the peanuts, set aside the date caramel.
To serve
Place the chocolate in a thin-sided bowl and suspend over a gently simmering bain-marie, ensuring that the bowl does not touch the water. Melt the chocolate and stir until smooth, allow to cool slightly. Serve the muesli in glasses or small bowls. Top with the date caramel and chocolate.
