Cinnamon sweet potatoes with lime & cinnamon butter

Ingredients

for 4 person

Sweet potatoes
1 kg sweet potato, cut into pieces approx. 3 cm wide
2 tbsp olive oil
¾ tsp chilli flakes
1 tsp cinnamon
¾ tsp salt
whole garlic with skin, cut in half crosswise
To roast
250 g plain organic cream cheese
¼ tsp salt
Lime & cinnamon butter
60 g butter
½ tsp cinnamon
lime, rinsed with hot water, dabbed dry, grated zest and juice

How it's done

Sweet potatoes

Mix the sweet potatoes, oil, chilli flakes, cinnamon and salt on a baking tray lined with baking paper. Place the garlic on the tray.

To roast

Approx. 35 mins. in the lower half of an oven preheated to 200°C. Remove, squeeze the garlic cloves out of their skins, mix with the cream cheese and salt.

Lime & cinnamon butter

Heat the butter in a pan until it foams and smells slightly nutty. Add the cinnamon, lime zest and lime juice. Drizzle over the sweet potatoes, serve with the cream cheese.
