Cinnamon sweet potatoes with lime & cinnamon butter
Ingredients
for 4 person
| 1 kg | sweet potato, cut into pieces approx. 3 cm wide |
| 2 tbsp | olive oil |
| ¾ tsp | chilli flakes |
| 1 tsp | cinnamon |
| ¾ tsp | salt |
| 1 | whole garlic with skin, cut in half crosswise |
| 250 g | plain organic cream cheese |
| ¼ tsp | salt |
| 60 g | butter |
| ½ tsp | cinnamon |
| 1 | lime, rinsed with hot water, dabbed dry, grated zest and juice |
How it's done
Sweet potatoes
Mix the sweet potatoes, oil, chilli flakes, cinnamon and salt on a baking tray lined with baking paper. Place the garlic on the tray.
To roast
Approx. 35 mins. in the lower half of an oven preheated to 200°C. Remove, squeeze the garlic cloves out of their skins, mix with the cream cheese and salt.
Lime & cinnamon butter
Heat the butter in a pan until it foams and smells slightly nutty. Add the cinnamon, lime zest and lime juice. Drizzle over the sweet potatoes, serve with the cream cheese.
