Caprese burgers
Ingredients
for 4 person
1 bunch | basil, roughly chopped |
3 tbsp | pine nuts, roasted |
½ dl | olive oil |
½ tsp | salt |
a little | pepper |
2 | beef tomatoes, cut into slices approx. 2 cm thick |
1 | garlic clove, squeezed |
1 tbsp | olive oil |
¼ tsp | salt |
1 dl | balsamic vinegar with figs |
4 | burger buns |
4 | burrata piccola, drained |
4 sprig | basil, leaves torn off |
How it's done
Pesto
Puree the basil with all the other ingredients up to and including the pepper.
Tomatoes
Place the tomatoes and garlic in a grill tray. Drizzle with oil, season with salt. Pour the balsamic into a deep dish, dip the buns in the balsamic (cut side down), remove.
Charcoal/gas/electric grill
With the lid down, grill the tomatoes over/on a medium heat (approx. 200°C) for approx. 10 mins. Grill the burger buns for approx. 1 min. on each side.
To serve
Spread pesto on the cut surfaces of the buns. Place the tomatoes and burrata on the bottom half of the buns. Add the basil leaves and cover with the top half.
