Simple vegan apple cake

I love this simple vegan cake because it's so easy to make and it's wonderfully light and fluffy. The apple rings on top are a real highlight. You can also replace them with pears or another type of fruit to suit your taste. You can even add some of the fruit to the cake mixture to give it an even fruitier flavour.

Ingredients

for 8 pieces

Cake mixture
150 g sugar
1 parcel bourbon vanilla sugar
100 g margarine
2 dl oat drink
1 tsp cinnamon
1 pinch salt
250 g light spelt flour
20 g Maizena cornflour
½ tsp baking powder
½ tsp sodium bicarbonate
apples, thinly sliced

How it's done

Cake mixture

Mix the sugar, vanilla sugar, margarine, oat milk, cinnamon and salt in a bowl. Combine the flour, cornflour, baking powder and bicarbonate of soda, mix in. Transfer the cake mixture to the prepared tin, arrange the apples on top.

To bake

Approx. 35 mins. in the centre of an oven preheated to 180°C. Remove from the oven, allow to cool slightly, remove from the tin and leave to cool completely on a rack.
