Nectarine salad with burrata
Ingredients
for 4 person
5 | nectarines, cut into wedges |
1 | red onion, cut into wedges |
1 tbsp | olive oil |
a little | salt |
a little | pepper |
300 g | nut bread, cut into approx. 1 cm slices |
2 tbsp | olive oil |
½ tbsp | Dijon mustard |
2 tbsp | balsamic vinegar |
2 tbsp | olive oil |
¼ tsp | sweet paprika |
½ tsp | salt |
a little | pepper |
2 | burrata (each approx. 100 g) |
100 g | Parma ham |
½ bunch | oregano, leaves torn off |
How it's done
Charcoal/gas/electric grill
Mix the nectarines and onions with the oil, season. With the lid down, grill over/on a medium heat (approx. 200°C) for approx. 8 mins., turning occasionally, then set aside. Brush the bread slices with the oil, grill alongside for approx. 2 mins. on each side, cut into pieces, set aside.
Salad
Combine the mustard, balsamic and oil, season. Plate up the nectarines, onions and pieces of bread. Top with the burrata and Parma ham, garnish with oregano. Drizzle the dressing over the top.
