Pork steaks with grilled lemon dressing
Ingredients
for 4 person
| 1 | organic lemon, use grated zest |
| 3 tbsp | olive oil |
| 3 tbsp | capers, drained, finely chopped |
| 1 bunch | flat-leaf parsley, finely chopped |
| salt and pepper to taste |
| 6 | spring onions incl. green parts, halved lengthwise |
| 2 | fennel, cut into wedges |
| 2 tbsp | olive oil |
| ¾ tsp | salt |
| 4 | pork steaks (each approx. 150 g) |
| 1 tbsp | olive oil |
| ¾ tsp | salt |
| a little | pepper |
How it's done
Dressing
Mix the lemon zest, oil, capers and parsley, season. Halve the lemon.
Charcoal/gas/electric grill
Mix the spring onions and fennel with the oil, season with salt. With the lid down, grill the vegetables and lemon halves over/on a very high heat (approx. 250°C) for approx. 10 mins. Squeeze the lemon halves into the dressing, mix. Brush the steaks with the oil, season. With the lid down, grill the steaks for approx. 7 mins. on each side. Serve the steaks and vegetables with the dressing.
