Blueberry cookies
Ingredients
for 16 pieces
100 g | butter, soft |
150 g | sugar |
¼ tsp | salt |
1 | egg |
150 g | white flour |
½ tsp | baking powder |
60 g | whole-grain rolled oats |
140 g | frozen blueberries |
How it's done
Cookie dough
Place the butter in a bowl, add the sugar, salt and egg. Beat using the whisk on a mixer until light and creamy. Combine the flour, baking powder and 50 g of oats, stir into the mixture. Carefully mix in the blueberries. Using a small ice cream scoop, shape the dough into approx. 16 half-balls and place on two baking trays lined with baking paper, leaving plenty of space between each cookie. Sprinkle with the remainder of the oats.
To bake
Approx. 15 mins. per tray in the centre of an oven preheated to 180°C. Remove from the oven, allow to cool slightly, leave to cool completely on a rack.
