Brownies with marshmallows
Ingredients
for 16 pieces
200 g | dark chocolate (64% cocoa), finely chopped |
110 g | butter, cut into pieces |
3 | eggs |
70 g | cane sugar |
¼ tsp | bourbon vanilla sugar |
1 pinch | salt |
80 g | white flour |
10 g | cocoa powder |
20 g | ground almonds |
80 g | mini marshmallows |
60 g | dark chocolate (64% cocoa), finely chopped |
How it's done
Brownie mixture
Place the chocolate and butter in a thin-sided bowl. Suspend over a gently simmering bain-marie; the bowl must not touch the water. Melt the chocolate and stir until smooth, allow to cool slightly. Mix the eggs, sugar and vanilla sugar in a bowl. Add the chocolate and salt, mix. Sieve the flour and cocoa powder, add along with the almonds, mix. Transfer the brownie mixture to the prepared tin, smooth down.
To bake
Approx. 25 mins. in the centre of an oven preheated to 180°C. Scatter the marshmallows on top and return to the oven for approx. 4 mins. Remove from the oven, allow to cool slightly, remove from the tin and leave to cool completely on a rack.
To garnish
Place the chocolate in a thin-sided bowl. Suspend over a gently simmering bain-marie; the bowl must not touch the water. Melt the chocolate, stir until smooth, spread on top of the brownies.
