If there's one food that makes everyone happy, it's chocolate. No matter how old you are, everyone loves chocolate. It's guaranteed to turn any afternoon snack into a real treat. These brownies are velvety smooth on the inside, while the lightly baked marshmallows on top taste like meringue and will delight the palate. They are easy to make and you can get the kids involved. They're sure to have fun with all the chocolate and marshmallows. These brownies are perfect for parties as they can be cut to size – depending on whether your party is for adults or children.

Ingredients

for 16 pieces

Brownie mixture
200 g dark chocolate (64% cocoa), finely chopped
110 g butter, cut into pieces
eggs
70 g cane sugar
¼ tsp bourbon vanilla sugar
1 pinch salt
80 g white flour
10 g cocoa powder
20 g ground almonds
To bake
80 g mini marshmallows
To garnish
60 g dark chocolate (64% cocoa), finely chopped

How it's done

Brownie mixture

Place the chocolate and butter in a thin-sided bowl. Suspend over a gently simmering bain-marie; the bowl must not touch the water. Melt the chocolate and stir until smooth, allow to cool slightly. Mix the eggs, sugar and vanilla sugar in a bowl. Add the chocolate and salt, mix. Sieve the flour and cocoa powder, add along with the almonds, mix. Transfer the brownie mixture to the prepared tin, smooth down.

To bake

Approx. 25 mins. in the centre of an oven preheated to 180°C. Scatter the marshmallows on top and return to the oven for approx. 4 mins. Remove from the oven, allow to cool slightly, remove from the tin and leave to cool completely on a rack.

To garnish

Place the chocolate in a thin-sided bowl. Suspend over a gently simmering bain-marie; the bowl must not touch the water. Melt the chocolate, stir until smooth, spread on top of the brownies.
