Cloud eggs with ham
Ingredients
for 2 person
2 | fresh egg whites |
1 pinch | salt |
40 g | ham cubes |
2 | fresh egg yolks |
1 tbsp | olive oil |
40 g | ham cubes |
2 | spring onions, cut into rings |
How it's done
Egg white mixture
Beat the egg whites with the salt until stiff. Carefully fold in the ham using a rubber spatula. Divide the mixture into 2 equal mounds on a baking tray lined with baking paper, leaving plenty of room between each. Create a well in the centre of each using a spoon.
To bake
Approx. 5 mins. in the centre of an oven preheated to 180°C. Remove the tray, slide the yolks into the wells, bake for a further 5 mins.
Topping
Heat the oil in a pan. Add the ham and spring onions, fry for approx. 4 mins., serve on top of the cloud eggs.
