Vegan lime & lemongrass sour
Ingredients
for 1 glass
| 1 ½ dl | water |
| 35 g | coarse cane sugar |
| 1 stick | lemongrass, coarsely chopped |
| ½ | lime, the whole juice |
| 1 dl | gin |
| 30 g | aquafaba |
| some | ice cubes |
| ½ | lime, rinsed with hot water, dabbed dry, grated zest |
| ½ tsp | coarse cane sugar |
| some | ice cubes |
| 1 stick | lemongrass |
How it's done
Lemongrass syrup
Bring the water withe the sugar and lemongrass to the boil in a pan, cover and simmer for approx. 15 mins. (yields 5 tbsp syrup). Leave the syrup to cool, pour through a sieve.
Cocktail
Pour the lime juice, gin, aquafaba and 4 tbsp of lemongrass syrup into the shaker. Top up the shaker with ice cubes, shake well for approx. 30 secs.
To serve
Mix the lime zest and sugar on a saucer. Pour 1 tbsp of lemongrass syrup onto a second saucer. Press the rim of the glass into the syrup and then into the lime mixture. Fill the glass with ice cubes, pour the cocktail through a sieve, garnish with lemongrass.
