Vegan cinnamon stars
Ingredients
for 30 pieces
150 g | ground hazelnuts |
150 g | ground almonds |
80 g | icing sugar |
2 tbsp | cinnamon |
1 pinch | salt |
3 tbsp | oat drink |
1 tbsp | organic lemon, use grated zest |
100 g | icing sugar |
2 tbsp | water |
How it's done
Dough
Mix the ground nuts, sugar, cinnamon and salt in a bowl. Add the oat milk and lemon zest, mix to form a dough. Cover the dough and chill for approx. 30 mins.
To shape and dry
Roll out the dough in batches to approx. 1 cm thick between two sheets of baking paper. Cut out the stars, dipping the cutter in sugar as you go. Place the biscuits on two baking trays lined with baking paper. Dry at room temperature for approx. 2 hrs.
To bake
Approx. 5 mins. per tray in the centre of an oven preheated to 240°C. Remove from the oven, allow to cool slightly, leave to cool completely on a rack.
Icing
Mix the icing sugar and water to make a thick icing. Coat the stars with the icing, leave to dry on a rack.
