Cicorino rosso with chicken
Ingredients
for 2 person
80 g | peanut butter (crunchy) |
1 cm | ginger |
2 tbsp | water |
¼ tsp | salt |
160 g | chicken breasts, cut into strips approx. 3 cm wide |
¼ tsp | salt |
a little | pepper |
1 tbsp | clarified butter |
8 leaf | red chicory |
How it's done
Peanut sauce
Place the peanut butter, ginger and water in a blending cup, puree until smooth, season with salt.
Chicken
Season the chicken strips. Heat the clarified butter in a non-stick frying pan. Fry the chicken strips over a medium heat for approx. 1 min. on each side, remove.
To serve
Spread the sauce in the middle of the cicorino leaves, place the chicken strips on top, plate up.
