Cicorino rosso with chicken

Ingredients

for 2 person

Peanut sauce
80 g peanut butter (crunchy)
1 cm ginger
2 tbsp water
¼ tsp salt
Chicken
160 g chicken breasts, cut into strips approx. 3 cm wide
¼ tsp salt
a little  pepper
1 tbsp clarified butter
To serve
8 leaf red chicory

How it's done

Peanut sauce

Place the peanut butter, ginger and water in a blending cup, puree until smooth, season with salt.

Chicken

Season the chicken strips. Heat the clarified butter in a non-stick frying pan. Fry the chicken strips over a medium heat for approx. 1 min. on each side, remove.

To serve

Spread the sauce in the middle of the cicorino leaves, place the chicken strips on top, plate up.
