Lamb's lettuce with bacon and sunflower seeds
Ingredients
for 4 person
| 80 g | diced bacon |
| 1 tbsp | sunflower oil |
| 50 g | sunflower seeds |
| 3 slice | toast bread, cut into cubes |
| 1 tbsp | honey mustard |
| 2 tbsp | lemon juice |
| 2 tbsp | sunflower oil |
| 3 tbsp | plain yoghurt |
| salt and pepper to taste | |
| 2 tbsp | chives, finely chopped |
| 150 g | lambs' lettuce |
How it's done
Crunchy topping
Without adding any oil, gently fry the diced bacon in a non-stick frying pan until crispy. Add the oil, seeds and bread cubes, fry for approx. 4 mins. and set aside.
Dressing
Whisk the mustard, lemon juice, oil and yoghurt in a bowl, season. Mix in the chives and lamb's lettuce, plate up. Sprinkle with the crunchy topping.
