Blue potato soup
Ingredients
for 4 person
| 2 tbsp | butter |
| 1 | shallot, finely chopped |
| 1 | garlic clove, finely chopped |
| 600 g | Blaue St. Galler potatoes (blue potatoes), peeled, chopped |
| 1 dl | white wine |
| 9 dl | water |
| 2 tsp | salt |
| a little | pepper |
| 100 g | crème fraîche |
| 30 g | Micro Greens |
How it's done
Soup
Heat the butter in a pan. Briefly sauté the shallot and garlic. Add the potatoes and cook for approx. 3 mins. Add the wine, simmer briefly. Pour in the water, bring to the boil, season. Reduce the heat, cover and simmer gently for approx. 25 mins. Puree the soup until smooth.
Topping
Plate up the soup, top with the crème fraîche and micro greens.
