Honey and hazelnut sticks
Ingredients
for 80 pieces
75 g | butter, soft |
40 g | sugar |
30 g | liquid honey |
1 pinch | salt |
1 | egg |
75 g | ground hazelnuts |
40 g | hazelnuts, coarsely chopped, roasted |
130 g | white flour |
80 g | icing sugar |
2 ½ tbsp | lemon juice |
How it's done
Dough
Place the butter in a bowl, whisk in the sugar, honey and salt using the whisk attachment on a mixer. Add the egg and continue to beat until the mixture becomes lighter in colour. Mix the ground and roasted nuts with the flour, add, combine quickly to form a soft dough, flatten slightly. Cover the dough and chill for approx. 2 hrs.
To shape
Divide the dough into approx. 80 portions. On a lightly floured work surface, roll into sticks approx. 7 cm long. Place on two baking trays lined with baking paper.
To bake
Approx. 8 mins. per tray in the centre of an oven preheated to 200°C. Remove from the oven, allow to cool slightly on the tray. Mix the icing sugar and lemon juice to make icing. Brush the sticks with the icing, leave to dry on a rack.
