Orecchiette with vegetables and bacon

Wonderfully quick and tasty. Perfect for days where time is in short supply. A light and nutritional pasta dish with crispy bacon. For a vegetarian version, simply leave out the bacon. It doesn't need to be replaced.

Ingredients

for 4 person

Bacon
240 g diced bacon
onions, finely chopped
garlic cloves, squeezed
Orecchiette and vegetables
500 g orecchiette
  salted water, boiling
cauliflower, cut into florets
broccoli, cut into florets
To complete
2 tbsp olive oil
a little  herb salt

How it's done

Bacon

Gently fry the diced bacon in a non-stick frying pan until crispy, without adding any oil. Add the onions and garlic, fry for approx. 4 mins. Remove the pan from the heat.

Orecchiette and vegetables

Precook the orecchiette in boiling salted water. Add the cauliflower and broccoli approx. 7 mins. before the end of the cooking time. Drain the orecchiette and vegetables, add to the bacon in the pan, mix.

To complete

Mix in the oil and salt, heat through, plate up the orecchiette.
