Quince bellini

Ingredients

for 1 glass

Quince puree
quince (approx. 200 g)
50 g sugar
½ dl water
Bellini
1 dl champagne

How it's done

Quince puree

Rub the quince clean with a towel, peel, quarter, core and cut into cubes. Mix the quince and sugar in a pan, pour in the water, cover and simmer for approx. 20 mins. until soft. Leave the quince to cool, puree until smooth.

Bellini

Spoon 3 cl of the quince puree into a champagne glass, top up with champagne, serve immediately.
