Papaya boats
Ingredients
for 4 person
125 g | ricotta |
1 | lime, rinsed with hot water, dabbed dry, grated zest, all of the juice set aside |
1 tsp | liquid honey |
2 | papayas, halved, deseeded |
4 tbsp | Granola |
125 g | blackberries |
4 | figs, cut into wedges |
1 | banana, sliced |
4 tsp | white almond cream |
How it's done
Ricotta cream
Puree the ricotta, lime zest and honey until smooth.
Papaya boats
Drizzle the papayas with the reserved lime juice, plate up. Top with granola, fruit and almond butter, fill with the ricotta cream, serve immediately.
