That’s why – every now and then – we like to treat ourselves to an exotic breakfast at home and bring some of that sunshine into our kitchen with these refreshing papaya boats. Ingredients

for 4 person

Ricotta cream
125 g ricotta
lime, rinsed with hot water, dabbed dry, grated zest, all of the juice set aside
1 tsp liquid honey
Papaya boats
papayas, halved, deseeded
4 tbsp Granola
125 g blackberries
figs, cut into wedges
banana, sliced
4 tsp white almond cream

How it's done

Ricotta cream

Puree the ricotta, lime zest and honey until smooth.

Papaya boats

Drizzle the papayas with the reserved lime juice, plate up. Top with granola, fruit and almond butter, fill with the ricotta cream, serve immediately.
