Pumpkin seed and sesame brittle
Ingredients
for 280 g
10 g | butter |
100 g | pumpkin seeds |
20 g | black sesame seeds |
20 g | sesame seeds |
2 pinch | sea salt |
120 g | cane sugar |
20 g | honey |
1 tbsp | water |
How it's done
Seeds
Heat the butter in a wide pan. Add the seeds and sesame, toast for approx. 5 mins. while stirring. Add the fleur de sel, remove from the pan.
Caramel
Pour the sugar, honey and water into the same pan, bring to the boil without stirring. Reduce the heat and simmer, swirling the pan occasionally until a light brown caramel has formed. Add the seeds, mix. Transfer the mixture to a sheet of baking paper, place a second sheet on top, roll out very thinly with a rolling pin. Leave to dry for approx. 1 hr. Break the brittle into pieces.
