The bellini has always been one of my favourite simple summer cocktails. This frozen version could well take its place as my new favourite! Instead of using peach syrup like in a classic bellini, I have added fresh peach. The trick is to use very ripe peaches that are in season. As peach is the main component of this drink, the quality of the peach is paramount. Add a dash of fresh lemon juice to lighten the drink and a touch of grenadine and maple syrup for extra sweetness.

Ingredients
for 4 person
| 250 g |
peaches (very ripe), cut into pieces, frozen |
| 3 ½ dl |
champagne |
| 1 |
lemon, the whole juice |
| ½ dl |
grenadine syrup |
| ½ dl |
maple syrup |
| some |
ice cubes |
How it's done
Puree the peach and all the other ingredients up to and including the ice cubes in a blender until smooth, pour immediately into chilled glasses and serve.
