Pastrami sandwich
Ingredients
for 2 person
1 tbsp | butter |
2 | onions, cut into thin rings |
40 g | dried apricots, finely chopped |
2 tbsp | water |
2 tbsp | balsamic vinegar |
¼ tsp | salt |
4 slice | bread |
2 tbsp | horseradish mustard |
90 g | pastrami |
2 | gherkins, sliced lengthwise |
How it's done
Onions
Heat the butter in a pan. Sauté the onions and apricots. Add the water, balsamic and salt, simmer over a low heat for approx. 10 mins. until soft. Remove the pan from the heat, allow to cool slightly.
Sandwich
Toast the bread on both sides in a frying pan, coat two slices with mustard. Top with the onions, pastrami and gherkins, cover with the remaining slices of toast.
