Bircher muffins
Ingredients
for 12 pieces
200 g | white flour |
70 g | fine whole-grain rolled oats |
¼ tsp | salt |
2 tsp | baking powder |
150 g | half-fat quark |
100 g | butter, melted, left to cool |
1 dl | elderflower syrup |
2 | eggs |
2 | apples, coarsely grated |
250 g | raspberries |
How it's done
Muffin mixture
Mix the flour, oats, salt and baking powder in a bowl. Combine the quark, butter, syrup and eggs, pour in. Mix in along with the apples and berries. Transfer the mixture to the prepared muffin tin.
To bake
Approx. 45 mins. in the centre of an oven preheated to 180°C. Remove from the oven, allow to cool slightly, remove the muffins from the tin.
