Grilled carrot salad with blackberries
Ingredients
for 2 person
| 3 tbsp | balsamic vinegar |
| 3 tbsp | olive oil |
| 1 tbsp | sugar |
| 2 sprig | rosemary, finely chopped |
| 1 | garlic clove, squeezed |
| ¼ tsp | salt |
| a little | pepper |
| 800 g | carrots, cut lengthwise into slices approx. 5 mm thick |
| 2 tbsp | olive oil |
| ¾ tsp | salt |
| 125 g | blackberries |
| 50 g | Parmesan, shaved |
How it's done
Dressing
In a bowl, mix the balsamic with all the other ingredients up to and including the pepper.
Charcoal/gas/electric grill
Mix the carrots with the oil and salt. With the lid down, grill over/on a medium heat (approx. 200°C) for approx. 5 mins. on each side. Mix the carrots with the dressing.
To serve
Plate up the carrots, top with the blackberries and the parmesan.
