Nectarine gin sour

Ingredients

for 4 glasses

Syrup
2 dl water
50 g sugar
nectarine, cut into small pieces
Cocktail
organic lemons
4 tbsp gin
fresh egg whites
some  ice cubes
½  nectarine, sliced

How it's done

Syrup

Bring the water, sugar and nectarine to the boil in a pan. Cover and simmer the syrup for approx. 15 mins., puree, pour through a sieve into a measuring cup.

Cocktail

Thinly peel the lemon zest using a peeler, twist, squeeze out the juice. Pour half of the gin, 100 ml of the syrup, half of the lemon juice and 1 egg white into a shaker, top up with ice cubes. Seal the shaker and shake well for approx. 30 secs. Divide the ice cubes between the glasses, pour the cocktail through a sieve into 2 glasses. Repeat the process. Decorate the glasses with the lemon peel and slices of nectarine.
