Grilled peach and tomato salad

Ingredients

for 4 person

Couscous
150 g couscous
organic lime, use a little grated zest, juice set aside
1 tsp ground coriander seeds
½ tsp salt
3 ½ dl water, boiling
Coriander dressing
2 bunch coriander, torn into pieces
garlic clove
½ dl olive oil
2 tbsp water
½ tbsp liquid honey
¼ tsp salt
a little  pepper
Charcoal/gas/electric grill
peaches, cut into wedges
½  charentais melon, cut into wedges
2 tbsp olive oil
¼ tsp chilli flakes
¼ tsp salt
Salad
tomatoes, cut into wedges
200 g burrata piccola, torn into pieces

How it's done

Couscous

Mix the couscous, lime zest, coriander and salt in a bowl, pour the boiling water over the top, cover and leave to absorb for approx. 5 mins. Separate the couscous with a fork.

Coriander dressing

Puree the coriander, garlic, oil, water and honey with the reserved lime juice until smooth, season.

Charcoal/gas/electric grill

Brush the peach and melon with oil, season. With the lid down, grill the peach and melon over/on a medium heat (approx. 200°C) for approx. 3 mins. on each side.

Salad

Serve the couscous on a platter. Top with the peach, melon and tomatoes. Arrange the burrata on top. Drizzle with the coriander dressing.
