Grilled peach and tomato salad
Ingredients
for 4 person
| 150 g | couscous |
| 1 | organic lime, use a little grated zest, juice set aside |
| 1 tsp | ground coriander seeds |
| ½ tsp | salt |
| 3 ½ dl | water, boiling |
| 2 bunch | coriander, torn into pieces |
| 1 | garlic clove |
| ½ dl | olive oil |
| 2 tbsp | water |
| ½ tbsp | liquid honey |
| ¼ tsp | salt |
| a little | pepper |
| 2 | peaches, cut into wedges |
| ½ | charentais melon, cut into wedges |
| 2 tbsp | olive oil |
| ¼ tsp | chilli flakes |
| ¼ tsp | salt |
| 3 | tomatoes, cut into wedges |
| 200 g | burrata piccola, torn into pieces |
How it's done
Couscous
Mix the couscous, lime zest, coriander and salt in a bowl, pour the boiling water over the top, cover and leave to absorb for approx. 5 mins. Separate the couscous with a fork.
Coriander dressing
Puree the coriander, garlic, oil, water and honey with the reserved lime juice until smooth, season.
Charcoal/gas/electric grill
Brush the peach and melon with oil, season. With the lid down, grill the peach and melon over/on a medium heat (approx. 200°C) for approx. 3 mins. on each side.
Salad
Serve the couscous on a platter. Top with the peach, melon and tomatoes. Arrange the burrata on top. Drizzle with the coriander dressing.
