Bellini sorbet
Ingredients
for 4 person
1 dl | water |
70 g | sugar |
400 g | peaches, cut into pieces |
1 tbsp | lemon juice |
4 dl | sparkling wine, chilled |
1 | peach, thinly sliced |
How it's done
Sorbet
Bring the water and sugar to the boil in a small pan, stirring occasionally. Reduce the heat, simmer for 2 mins., leave to cool. Add the peach and lemon juice, puree. Transfer the mixture to a wide stainless steel bowl.
To freeze
Cover and freeze for approx. 3 hrs. Puree the sorbet and freeze again for approx. 3 hrs.
To serve
Shape the sorbet into balls, serve with the sparkling wine and peach slices.
