Grilled cucumber salad with radish and trout

Ingredients

for 2 person

Cucumber
cucumber, cut lengthwise into thin slices
1 tbsp olive oil
Dressing
2 tbsp white balsamic vinegar
1 ½ tbsp olive oil
2 tbsp plain yoghurt
¼ tsp salt
a little  pepper
1 bunch radish incl. green parts, greens set aside, radish quartered
Salad
smoked trout filet, torn into pieces

How it's done

Cucumber

Brush both sides of the cucumber slices with oil.

Charcoal/gas/electric grill

With the lid down, grill the cucumber slices over/on a medium heat (approx. 200°C) for approx. 1½ mins. on each side.

Dressing

Mix the balsamic, oil, yoghurt, salt and pepper in a bowl. Finely chop half of the radish greens, mix into the dressing.

Salad

Add the radish, trout and cucumbers to the dressing, mix. Garnish with the remainder of the radish greens.
