Grilled cucumber salad with radish and trout
Ingredients
for 2 person
1 | cucumber, cut lengthwise into thin slices |
1 tbsp | olive oil |
2 tbsp | white balsamic vinegar |
1 ½ tbsp | olive oil |
2 tbsp | plain yoghurt |
¼ tsp | salt |
a little | pepper |
1 bunch | radish incl. green parts, greens set aside, radish quartered |
1 | smoked trout filet, torn into pieces |
How it's done
Cucumber
Brush both sides of the cucumber slices with oil.
Charcoal/gas/electric grill
With the lid down, grill the cucumber slices over/on a medium heat (approx. 200°C) for approx. 1½ mins. on each side.
Dressing
Mix the balsamic, oil, yoghurt, salt and pepper in a bowl. Finely chop half of the radish greens, mix into the dressing.
Salad
Add the radish, trout and cucumbers to the dressing, mix. Garnish with the remainder of the radish greens.
