Pan-fried courgette with a crunchy crumb topping
Ingredients
for 2 person
2 tbsp | olive oil |
50 g | panko breadcrumbs or regular breadcrumbs |
1 | garlic clove, squeezed |
2 pinch | salt |
2 tbsp | olive oil |
3 | courgettes, cut lengthwise into slices |
½ tsp | salt |
a little | pepper |
½ bunch | basil, torn into pieces |
80 g | cured ham in slices |
How it's done
Crunchy crumb topping
Heat the oil in a large non-stick frying pan. Stir fry the breadcrumbs and garlic for approx. 4 mins., season with salt, remove, set aside.
Pan-fried courgette
Heat the oil in the same pan. Fry the courgette slices for approx. 10 mins., stirring occasionally, season. Serve the courgette with the basil, cured ham and crunchy crumb topping.
