There are some basic recipes that you just don’t want to be without in the kitchen. This simple sponge cake with warm milk is one of them. Add a dusting of icing sugar for the perfect quick and healthy snack, or fill it with chocolate cream, jam and fresh fruit. It can also be iced or served with a delicious custard, for instance. This cake is perfect for playing around with your favourite flavours and giving your imagination free rein.

Ingredients

for 12 pieces

Milk
1 ¼ dl milk
65 g butter
Cake mixture
eggs
120 g sugar
¼ tsp bourbon vanilla sugar
1 pinch salt
130 g white flour
1 tsp baking powder
To bake
  icing sugar, to dust

How it's done

Milk

Heat the milk and butter in a small pan, bring to just below the boil, set aside.

Cake mixture

Using the whisk on a mixer, beat the eggs, sugar, vanilla sugar and salt in a bowl for approx. 5 mins., continue to beat until the mixture becomes lighter in colour. Combine the flour and baking powder, mix in. Stir in the milk. Transfer the mixture to the prepared tin.

To bake

Approx. 30 mins. in the centre of an oven preheated to 180°C (convection). Remove from the oven, allow to cool slightly, remove from the tin and leave to cool completely on a rack. Dust the cake with icing sugar.
