Southside cocktail with peppermint

Jazzing up a traditional cocktail is a wonderful opportunity to enjoy a twist on a classic. A Southside is usually made with gin, lemon juice and syrup. Adding a hint of peppermint to the syrup gives the cocktail a wonderfully fresh flavour. Alternatively, you can also use lime juice instead of lemon juice and so give the cocktail an additional flavour.

Ingredients

for 2 glasses

Peppermint syrup
1 ⅕ dl water
120 g sugar
½ bunch peppermint, torn into pieces
Cocktail
1 ¼ dl gin
4 tbsp lemon juice
some  ice cubes
a little  peppermint, leaves torn off

How it's done

Peppermint syrup

Bring the water, sugar and mint to the boil in a pan. While still boiling hot, pour the syrup into a clean, warm bottle and fill to just below the rim, seal immediately, leave to cool.

Cocktail

Pour the gin, lemon juice and 3 tbsp of the peppermint syrup into a shaker, top up with ice cubes. Seal the shaker and shake well for approx. 30 secs. Pour the cocktail through a sieve into two glasses. Decorate the glasses with mint leaves.
