So tasty and yet so simple! These jam slices can be made with any jam you like and are perfect with a nice cup of tea or coffee. They can be served elegantly on a saucer and eaten with a fork. Or you can roll out the dough, cover it with jam, roll it up and make little roulades. They may look different, but they will taste just as delicious.

Ingredients

for 10 pieces

Dough
300 g light spelt flour
100 g full-cane sugar
200 g butter, cut into pieces, cold
60 g apple sauce
To shape
300 g cherry jam
2 tbsp flaked almonds
To bake
  icing sugar, to dust

How it's done

Dough

Mix the flour and sugar in a bowl. Add the butter and rub together using your hands to form an even, crumbly mixture. Add the apple sauce, mix quickly to form a soft dough; do not knead. Flatten the dough, cover and chill for approx. 1 hr.

To shape

Roll the dough into a rectangle approx. 4 mm thick between two sheets of baking paper. Remove the top sheet of baking paper. Spread the jam on top of the dough, leaving approx. 1 cm free around the edges. Fold in the edges, sprinkle with flaked almonds. Transfer to a baking tray along with the baking paper.

To bake

Approx. 25 mins. in the centre of an oven preheated to 200°C. Remove from the oven, leave to cool on a rack, dust with icing sugar, cut into slices.
