Pepper rice with feta
Ingredients
for 2 person
| 1 tbsp | olive oil |
| 1 | onion, finely chopped |
| 1 | garlic clove, finely chopped |
| 2 tbsp | tomato puree |
| 250 g | precooked basmati rice (e.g. Uncle Ben's Express) |
| 1 glass | roasted peppers in oil (approx. 290 g), drained, cut into strips |
| 1 tbsp | lemon juice |
| ½ tsp | salt |
| a little | pepper |
| 100 g | feta, crumbled |
| 4 sprig | coriander, leaves torn off |
How it's done
Rice
Heat the oil in a pan. Sauté the onion and garlic. Add the tomato puree and rice, cook briefly. Add the pepper and lemon juice, cover and continue to cook for approx. 3 mins., season. Mix the feta and coriander into the rice.
