Curried glass noodle salad

Ingredients

for 2 person

Salad
30 g glass noodles, cut into pieces
  water, boiling
1 tbsp Fine Food Marushima Shoyu
½ tbsp rice vinegar
1 tsp sesame oil
1 tsp red curry paste
spring onion incl. green part, cut into thin rings
carrot, cut into thin slices
1 tbsp Fine Food Tom Yam coated peanuts, coarsely chopped
To serve
1 tbsp Fine Food Tom Yam coated peanuts, coarsely chopped
2 sprig coriander, torn into pieces

How it's done

Salad

Place the glass noodles in a bowl, pour boiling water over the top, leave to absorb for approx. 10 mins., drain. Thoroughly mix the soy sauce, rice vinegar, sesame oil and curry paste in the same bowl. Mix in the spring onion, carrot, peanuts and glass noodles.

To serve

Plate up the salad, top with the peanuts and coriander.
