Curried glass noodle salad
Ingredients
for 2 person
30 g | glass noodles, cut into pieces |
water, boiling | |
1 tbsp | Fine Food Marushima Shoyu |
½ tbsp | rice vinegar |
1 tsp | sesame oil |
1 tsp | red curry paste |
1 | spring onion incl. green part, cut into thin rings |
1 | carrot, cut into thin slices |
1 tbsp | Fine Food Tom Yam coated peanuts, coarsely chopped |
1 tbsp | Fine Food Tom Yam coated peanuts, coarsely chopped |
2 sprig | coriander, torn into pieces |
How it's done
Salad
Place the glass noodles in a bowl, pour boiling water over the top, leave to absorb for approx. 10 mins., drain. Thoroughly mix the soy sauce, rice vinegar, sesame oil and curry paste in the same bowl. Mix in the spring onion, carrot, peanuts and glass noodles.
To serve
Plate up the salad, top with the peanuts and coriander.
