Sweet potato mash with chorizo and sage
Ingredients
for 2 person
| 400 g | sweet potatoes, peeled, diced |
| salted water, boiling |
| 2 tbsp | olive oil |
| 100 g | chorizo, peeled, diced |
| ¼ bunch | sage |
| ½ | lime, the whole juice |
| ¼ tsp | salt |
How it's done
Mash
Cook the sweet potatoes in salted water for approx. 20 mins. until soft, drain, mash with a fork or potato masher.
Topping
Heat the oil in a frying pan. Stir fry the chorizo and sage for approx. 5 mins. until crispy. Drizzle the chorizo, sage, oil and lime juice over the mash, season with salt.
