Apricot and passion fruit lemonade
Ingredients
for 2 litres
2 dl | water |
200 g | sugar |
3 | apricots, cut into cubes |
2 | passion fruit, pulp scooped out |
2 | lemons, the whole juice |
1 ½ litre | sparkling mineral water |
2 | passion fruit, pulp scooped out |
some | ice cubes |
How it's done
Apricot syrup
In a pan, bring the water to the boil with the sugar and diced apricots, simmer for approx. 5 mins. Pass the passion fruit pulp through a sieve into the syrup, stir in the lemon juice, leave to cool.
Lemonade
Stir the sparkling water and passion fruit pulp into the syrup, serve with ice cubes.
