Honey and buttermilk braided bread
Ingredients
for 800 g
| 450 g | white flour |
| 1 ½ tsp | salt |
| 1 parcel | dry yeast (approx. 7 g) |
| 1 dl | buttermilk |
| 2 | eggs |
| 80 g | liquid blossom honey |
| 150 g | butter, cut into pieces |
| 1 | egg |
| 1 pinch | salt |
| 1 pinch | sugar |
| ½ tbsp | sesame seeds |
How it's done
Dough
Mix the flour, salt and yeast in the food processor bowl. Add the buttermilk, eggs and honey. Knead for approx. 10 mins. using the dough hook on the food processor. Gradually add the butter and continue to knead for approx. 10 mins. Cover the dough and leave to rise at room temperature for approx. 4 hrs.
Zopf (braided bread)
Divide the dough into five portions. Shape each piece of dough into a strand approx. 40 cm long, braid the strands of dough to create a loaf. Place the bread on a baking tray lined with baking paper, cover and leave to rise for approx. 1 hr. Whisk together the egg, salt and sugar, brush the bread with the glaze, sprinkle with the sesame seeds.
To bake
Approx. 35 mins. in the lower half of an oven preheated to 180°C. Remove from the oven, leave to cool completely on a rack.
