Basil and lime spritzer

Ingredients

for 4 person

Lime syrup
4 dl water
limes, rinsed with hot water, dabbed dry, grated zest and juice
200 g sugar
Spritzer
2 dl water
½ bunch basil, leaves torn off
lime, the whole juice
  ice cube
6 dl sparkling mineral water

How it's done

Lime syrup

Bring the water to the boil with the lime zest, lime juice (approx. 150 ml) and sugar while stirring. Reduce over a medium heat to a syrupy consistency for approx. 20 mins. While still boiling hot, pour the syrup through a sieve into the clean, warmed bottle and fill to just below the rim. Seal immediately and leave to cool.

Spritzer

Blend the water with the basil until smooth, pour through a fine sieve into glasses. To each glass add 1 tbsp of syrup, lime juice and ice cubes, then top up with sparkling water.
